Texas Thin Crust Pizza


Pizza is a food that almost everyone craves from time-to-time! So, rather than cut it out completely, avoid the processed carbs and saturated fats and dig into this healthy thin crust version!


  • Olive oil cooking spray

  • 6 ounces of ground sirloin or extra lean ground beef

  • 1/4 tsp of salt

  • 1/8 tsp of pepper

  • 1/4 cup yellow onion (diced)

  • 1/4 cup red bell pepper (diced)

  • 2 tsp of minced garlic

  • 1/4 cup tomato (diced)

  • 2 tbsp of sugar free or low sugar bbq sauce

  • 1 whole tortilla

  • 1/4 cup of pineapple (thinly sliced)

  • 1/2 cup of aged white cheddar (grated)


Preheat oven to 400°F. While the oven is warming up, heat a non-stick frying pan on medium. Lightly coat with spray, add the ground meat and season with salt and pepper. Sauté the beef until lightly browned and cooked all the way through. Add the onions, peppers and garlic and sauté for 1-minute more. Add the tomato and BBQ sauce, stir until combined and remove from heat. Lightly coat a baking sheet with spray and place the tortilla shell on the tray. Spread the beef and veggie mixture evenly on the shell, leaving the outside half inch for crust. Top with the pineapple and cheese and then place in the oven. Bake until cheese is melted and shell is nicely toasted (about 10-minutes). Serves 1 large or 2 small.
