Paleo Pancakes With Apples And Cinnamon
Paleo pancakes are a great way to improve body composition and health, while still enjoying a treat! However, that doesn’t change the fact that a stack of flapjacks, whole butter and syrup is incredibly enjoyable first thing in the AM.
Pancakes are avoided because the traditional make-up is that of carbohydrates and sugar…not ideal for losing weight! The recipe to follow changes the usual carb dominant constituents to a more healthy fat based meal. Protein powder can also be added to this recipe for a breakfast high in fat and protein, which is ideal to have in the morning!
My recommendation is to enjoy this meal once or twice every month – on days the you workout, as a reprieve from the usual eggs/bacon, meat/nuts or protein smoothie!
Coconut oil or whole unsalted organic “roll” butter
1/4 cup of ground walnuts of almonds
1/4 cup of coconut milk
1/2 small apple or 1/4 large apple
1/2-1 tsp cinnamon
1/2 cup blueberries
1 scoop of vanilla or plain protein powder (optional)
Coat a non-stick skillet with coconut oil or whole butter.
Grind the nuts in a food processor or a coffee grinder or just purchase Trader Joe’s Just Almond Meal!
Place all ingredients (except blueberries) into a blender and mix well.
Pour mixture evenly into your skillet and heat on medium.
Be sure not to burn them, several minutes per side will do!
These pancakes can be messy to flip so take your time or have another skillet going. Just turn the skillet over and let the pancake fall onto the other skillet!
