Healthy Snack: Buffalo Avocado Chips
"What are some ideas of a healthy snack?" As personal trainers, this is a question we hear weekly! Here's our solution: mouth-watering Buffalo Avocado Chips!
The avocados provide you with a great source of heart healthy omega-3 fats and a solid dose of dietary fiber! Also, avocados are loaded with antioxidants, potassium and have been shown to improve weight loss! If this versatile fruit hasn't hooked you in the past, try this recipe...it'll change your tune!
1 avocado, pitted and cut into slices
2 tbsp flour (almond/gluten-free preferred)
1/2 tbsp paprika
pinch of black pepper
1/2 tsp mixed herbs
1/2 tsp cajun
20g grated parmesan
1 cup of bread crumbs (gluten-free)
100g greek yogurt
2 cloves garlic diced
1 tsp fresh or dried rosemary
1/2 tsp chili flakes
Squeeze of lemon juice
Preheat the oven to 350° and line cooking tray with parchment paper.
While the oven is warming up, add parmesan, cajun, paprika, herbs and pepper to the breadcrumbs and stir to combine.
At this point grab two other bowls. In one add the flour and the second lightly beat the egg.
Now roll each avocado slice into the plain four, then dip them into the egg and finally roll them into the flavored breadcrumbs until well coated.
Put the buffalo avocado slices onto the baking tray and into the oven for 8-10 minutes or until golden and crispy!
While the buffalo chips are baking, mix together all the dip ingredients. If you're one who enjoys a bit of spice try adding in a few drops of Sriracha Chili Sauce too!
