Recipes such as this can be the difference that keeps your progress rolling. Although healthy, this version of BBQ chicken pizza will still provide that same "comfort food" taste! If you're starting to feel bogged down with the same old foods, try this recipe to switch things up!

INGREDIENTS(Toppings):

  • 4 - 6 ounces of grilled, diced chicken breast

  • 1/2 cup of low sugar barbecue sauce

  • 3/4 cup of shredded mozzarella (if you're avoiding dairy, opt for almond based cheese)

  • 1/4 cup of red onion, finely chopped

  • 2 tablespoons of ripped apart cilantro

INGREDIENTS(Crust):

  • 1 bag of frozen riced cauliflower (from Trader Joe's)

  • 1 egg

  • 1/2 cup of shredded mozzarella

  • 1/4 cup of grated parmesan

  • 1 teaspoon of oregano or Italian seasoning blend

DIRECTIONS:

  1. Preheat oven to 450°

  2. Follow that back of the package for instructions on how to cook the rice cauliflower.

  3. Place the cooked cauliflower in a tea towel or paper towel and squeeze as much moisture out as possible!

  4. In a bowl, mix cauliflower, egg, cheese, oregano, salt and pepper.

  5. Press mixture onto a baking sheet in the shape of your choice and place in the oven for 10 minutes

  6. In another bowl, mix together the bbq sauce, chicken breast, cheese, red onion.

  7. Pull the crust out, place the toppings on and put back into the oven for another 8-10 minutes.
