Avocado Salad Cilantro Lime Shrimp

This avocado salad recipe has it all, clean protein, healthy fats and veggies! You're getting all the necessary pieces needed to lose fat and build muscle. Not to mention, this is a cool, fresh salad that is perfect for a summer dinner.

Ingredients:

  • 2 avocados, cut into large pieces

  • A few handfuls of sliced grape tomatoes

  • 2 pounds of boiled or steamed shrimp (peeled & deveined)

  • 1 large head of fresh romaine lettuce (chopped)

  • 2 tbsp of diced red onion

  • For The Cilantro Lime Vinaigrette Dressing:

    • 1/4 cup extra virgin olive oil

    • 1/4 cup lime juice

    • A clove garlic, minced

    • 1 tablespoon chopped fresh cilantro

    • A teaspoon of Dijon mustard

    • salt & pepper to taste

Directions:

  1. In a large bowl, add chopped romaine lettuce, shrimp, avocado, tomatoes, red onions.

  2. Whisk together vinaigrette dressing ingredients and poor over bowl contents.

  3. Toss to evenly distribute dressing and serve!
