Stuffed peppers is a nutrient dense meal that combines high quality protein, veggies and complex carbohydrates (if you’ve earned them)! In the recipe listed we’re using ground turkey but feel free to try lean ground beef or even ground chicken, both taste great! Any color bell pepper works, they’re all loaded with vitamins C, A and K, as well as potassium. If you’re trying to lose weight, leave the rice out, as that will add unnecessary calories.
4 large bell peppers
1-pound leanest ground turkey
1/ 3 cup shredded pepper Jack cheese
1/ 2 cup chopped scallion, white and green parts
1 cup cooked jasmine brown rice
1 1/ 2 teaspoons chili powder 1 teaspoon garlic powder
1/ 2-teaspoon ground cumin
1/ 2 teaspoon each salt and freshly ground pepper
2 jars (16 ounces) natural salsa
Slice off the tops of the peppers and remove all seeds and membranes. In a medium-size bowl, combine the turkey, cheese, scallion, rice, chili powder, garlic powder, cumin, salt, and pepper and mix well to combine. Stuff each pepper with an equal amount of the turkey mixture and place them, cut side up, in the slow cooker. Pour the salsa evenly over the peppers, cover, and cook on low for 6 to 7 hours, or until the ground turkey is cooked through. Enjoy!
