Cauliflower Fried Rice
Cauliflower fried rice is your answer to turning a not so healthy dinner option, into a low-carb, health promoting staple. By using a head of cauliflower, your choice of veggies and meat, it’s easy to construct a healthy stir-fry the whole family will enjoy!
1 Head of Cauliflower
2 Eggs Whisked
Cubed Carrots & Peas, 1 Pound Fresh or Frozen
1-2 Tablespoon of Tamari Soy Sauce
2 Tablespoon of Coconut Oil, Olive Oil or Whole Butter (unsalted)
Salt & Pepper to Taste
Cut cauliflower into smaller pieces and place into a food processor.
Blend cauliflower until it resembles small, rice-like pieces (it’ll be easy to tell).
Heat 2 tablespoons of coconut oil in a large skillet over medium.
Add vegetables and cook until soft.
Add cauliflower and stir ever-so-often to ensure it does not burn.
In a separate pan cook eggs as if you were scrambling them. Constantly move around and chop up so that the eggs do not clump together.
Once the eggs are fully cooked, add to the cauliflower and veggie mix.
To finish up add in soy sauce and stir!
This specific recipe will yield around 4 servings! Feel free to grill some chicken and mix it in or use it as a side with seafood or other meat!
